  • 2 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup plain Greek yogurt
  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/2 cup granulated sugar (for cinnamon sugar swirl)
  • 1 Tablespoon cinnamon (for cinnamon sugar swirl)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×5 loaf pan with parchment paper.
  2. In a large bowl, mix zucchini, eggs, vegetable oil, Greek yogurt, and vanilla extract until well combined.
  3. In another bowl, whisk together flour, sugar, baking powder, salt, and spices. Gradually add dry ingredients to the wet mixture; stir until just combined.
  4. For the cinnamon swirl, mix granulated sugar with cinnamon in a small bowl.
  5. Pour half of the batter into the prepared pan and sprinkle with half of the cinnamon sugar mixture. Add remaining batter and top with the rest of the cinnamon sugar; swirl gently with a knife.
  6. Bake for 60–65 minutes or until a toothpick comes out clean from the center. Let cool before slicing.
