Mini Egg Cookie Bars are a delightful treat that perfectly combines chewy cookie goodness with vibrant chocolate eggs. Ideal for sharing at gatherings or enjoying during festive occasions, these bars are not only simple to make but also visually appealing.

  • 115 g unsalted butter
  • 135 g light brown sugar
  • 55 g granulated sugar
  • 1 medium egg
  • 1 tsp vanilla extract
  • 275 g plain flour
  • 1 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 1 tbsp cornflour
  • 100 g milk chocolate chips
  • 100300 g mini eggs

Instructions

  1. Preheat your oven to 190ºC (170ºC fan) and line a 9×9 inch square tin with parchment paper.
  2. In a mixing bowl, combine melted butter, brown sugar, and granulated sugar until well mixed.
  3. Stir in the egg and vanilla extract until smooth.
  4. Add flour, cornflour, bicarbonate of soda, and salt; mix until no dry spots remain.
  5. Gently fold in chocolate chips and most of the mini eggs.
  6. Press the mixture into the lined tin and top with additional mini eggs.
  7. Bake for 18-22 minutes until the top looks dry.
  8. Allow cooling before cutting into squares.
