  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
  • 1 package puff pastry (thawed)
  • 1 egg (beaten, for egg wash)
  • 1 tablespoon Dijon mustard (optional, for added flavor)
  • Flour (for dusting)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season the beef with salt and pepper before placing it in the skillet. Sear each side for about 2-3 minutes until browned. Remove from heat and let cool.
  2. In the same skillet, add finely chopped mushrooms, shallots, and minced garlic. Cook until the mushrooms are golden brown—this should take around 5-7 minutes. Stir in fresh thyme, season with salt and pepper to taste, then set aside to cool.
  3. On a floured surface, roll out the thawed puff pastry sheets until they reach about 1/8 inch thick. Cut into squares measuring approximately 3×3 inches.
  4. Place a spoonful of mushroom duxelles on each pastry square. Add one piece of seared beef on top of each mound of mushrooms. Fold over the pastry to seal it around the filling; use a fork to crimp and secure the edges.
  5. Preheat your oven to 400°F (200°C). Arrange your assembled bites on a baking sheet lined with parchment paper. Brush each with beaten egg to create a beautiful golden crust while baking. Bake for 15-20 minutes or until they turn golden brown.
