Ingredients

Scale
  • 1 diced tomato (grape, cherry, or plum)
  • ⅓ cup diced red onion
  • 1 cup chopped spinach
  • ½ cup feta cheese
  • 1 cup shredded mozzarella cheese
  • 3 burrito-style flour tortillas
  • 1 tablespoon oil (for cooking)

Instructions

  1. In a mixing bowl, combine the diced tomato, red onion, chopped spinach, feta cheese, and shredded mozzarella cheese. Mix gently until well combined.
  2. Lay each tortilla flat on your work surface and spread one-third of the filling mixture onto one half of each tortilla. Fold over to create a half-moon shape.
  3. Heat oil in a large flat pan or griddle over medium heat. Cook each quesadilla for 3-4 minutes per side until golden brown and the cheese melts.
  4. Remove from the pan and cut into four slices. Serve immediately with your choice of dipping sauces or toppings.
