  • 12 ounces dry pasta (farafalle or your choice)
  • 1 English cucumber, diced
  • 1 pint cherry or grape tomatoes, halved
  • 2/3 cup sliced kalamata olives
  • half of a medium red onion, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons red apple vinegar
  • 1 tablespoon freshly-squeezed lemon juice
  • 2 teaspoons dried oregano, minced
  • 1 teaspoon honey (or your desired sweetener)
  • 2 small garlic cloves, minced
  • 1/4 teaspoon freshly-cracked black pepper
  • 1/4 teaspoon salt
  • pinch of crushed red pepper flakes

Instructions

  1. Cook pasta in salted boiling water until al dente; drain and rinse under cold water.
  2. Dice cucumber and halve tomatoes while pasta cooks; slice onion.
  3. Whisk together olive oil, vinegar, lemon juice, oregano, honey, garlic, pepper, salt, and red pepper flakes in a bowl.
  4. In a large mixing bowl, combine pasta with vegetables and vinaigrette; toss to coat evenly.
  5. Taste and adjust seasoning before serving; chill for at least 30 minutes for best flavor.
