  • 3 tbsp extra virgin olive oil
  • 1 medium brown onion, peeled and finely diced
  • 1 large carrot, washed and finely diced
  • 2 ribs celery, finely diced
  • 3 cloves garlic, finely chopped
  • 170 g cherry tomatoes, quartered
  • 5 cups vegetable stock
  • 1 tsp dried oregano
  • 1/4 tsp dried red chilli pepper flakes
  • 1 tsp fresh rosemary, finely chopped
  • 3/4 cup dried orzo pasta
  • 1 1/2 cups curly kale, stems removed, finely chopped and firmly packed
  • Sea salt and freshly ground black pepper, to taste
  • 2 tbsp fresh basil leaves, finely chopped
  • Extra virgin olive oil, for drizzling

Instructions

  1. In a large saucepan, heat olive oil over medium heat. Add diced onion, carrot, and celery; sauté for about 5 minutes until softened.
  2. Stir in minced garlic and cook for an additional minute until fragrant.
  3. Add vegetable stock, cherry tomatoes, oregano, red chili pepper flakes, and rosemary; bring to a simmer.
  4. Stir in the orzo and cook for about 8 minutes, stirring regularly.
  5. Incorporate chopped kale once the pasta is nearly cooked; allow it to wilt.
  6. Adjust seasoning as needed, then serve immediately topped with fresh basil and a drizzle of olive oil.
