  • 1.5 lbs boneless, skinless chicken breasts
  • 3 tbsp extra virgin olive oil
  • Salt & black pepper to taste
  • 2 medium zucchini, sliced into half-moons
  • 2 red bell peppers, diced into chunks
  • 1 large red onion, sliced into strips
  • 2 cups cherry tomatoes, halved
  • 1 cup Kalamata olives, pitted and halved
  • 4 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp dried thyme
  • Juice of 1 lemon
  • 0.5 cup crumbled feta cheese
  • 2 tbsp fresh parsley (optional garnish)

Instructions

  1. Prep all ingredients by chopping chicken and slicing vegetables.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear chicken pieces until golden brown (5–7 minutes), then set aside.
  3. In the same skillet, add another tablespoon of olive oil and sauté onions until translucent. Add minced garlic and cook until fragrant.
  4. Stir in zucchini, bell peppers, cherry tomatoes, olives, and sun-dried tomatoes; stir-fry until tender yet crisp.
  5. Return chicken to the skillet; sprinkle with dried herbs and toss everything together.
  6. Remove from heat, squeeze lemon juice over stir fry, fold in feta cheese, and garnish with fresh parsley if desired.
