- 1.5 lbs boneless, skinless chicken breasts
- 3 tbsp extra virgin olive oil
- Salt & black pepper to taste
- 2 medium zucchini, sliced into half-moons
- 2 red bell peppers, diced into chunks
- 1 large red onion, sliced into strips
- 2 cups cherry tomatoes, halved
- 1 cup Kalamata olives, pitted and halved
- 4 cloves garlic, minced
- 1/4 cup sun-dried tomatoes, chopped
- 2 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp dried thyme
- Juice of 1 lemon
- 0.5 cup crumbled feta cheese
- 2 tbsp fresh parsley (optional garnish)
- Prep all ingredients by chopping chicken and slicing vegetables.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear chicken pieces until golden brown (5–7 minutes), then set aside.
- In the same skillet, add another tablespoon of olive oil and sauté onions until translucent. Add minced garlic and cook until fragrant.
- Stir in zucchini, bell peppers, cherry tomatoes, olives, and sun-dried tomatoes; stir-fry until tender yet crisp.
- Return chicken to the skillet; sprinkle with dried herbs and toss everything together.
- Remove from heat, squeeze lemon juice over stir fry, fold in feta cheese, and garnish with fresh parsley if desired.
