  • 1.5 lbs boneless, skinless chicken breasts
  • 3 tbsp extra virgin olive oil
  • salt (to taste)
  • black pepper (to taste)
  • 2 medium zucchini
  • 2 red bell peppers
  • 1 large red onion
  • 2 cups cherry tomatoes
  • 1 cup kalamata olives
  • 4 cloves garlic
  • ¼ cup sun-dried tomatoes
  • 2 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp dried thyme
  • 1 lemon (juiced)
  • ½ cup feta cheese (crumbled)
  • 2 tbsp fresh parsley (for garnish)

Instructions

  1. Prepare all ingredients by cutting the chicken into bite-sized pieces and slicing the vegetables.
  2. Heat olive oil in a large skillet or wok over medium-high heat until shimmering.
  3. Add chicken to the skillet; season with salt and pepper. Cook for about 5–7 minutes until browned and cooked through. Remove from the pan.
  4. In the same skillet, sauté zucchini, red bell peppers, and red onion for about 4–5 minutes until softened. Add minced garlic during the last minute of cooking.
  5. Return cooked chicken to the skillet along with cherry tomatoes, olives, sun-dried tomatoes, herbs, and lemon juice. Stir well and cook for an additional 3–4 minutes until heated through.
  6. Serve topped with crumbled feta cheese and additional fresh parsley if desired.
