  • 6 ounces prepared mincemeat
  • 3/4 cup dried currants
  • 1 large egg
  • 1/3 cup + 1 tablespoon finely granulated sugar
  • 1/3 cup butter at room temperature
  • 1 cup – 1 tablespoon self-raising flour

Instructions

  1. Preheat your oven to 160°C (325°F).
  2. Line a muffin tin with 12 muffin cases.
  3. In a mixing bowl, combine all ingredients and mix using a whisk or electric mixer until smooth (about 2 minutes).
  4. Spoon the mixture into each muffin case until they are about three-quarters full.
  5. Bake in the preheated oven for about 25–30 minutes, or until golden brown and springy to the touch.
  6. Allow to cool on a rack before serving.
