  • 1 tbsp butter
  • 2 shallots
  • 2 cloves garlic
  • 56 sun-dried tomatoes
  • 2 tbsp tomato puree
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp smoked paprika
  • 2 tsp oregano
  • 1 tsp cayenne chili pepper
  • Salt & pepper, to taste
  • 500ml vegetable stock
  • 150ml plant-based cream
  • 150g bow-tie pasta
  • 1 handful fresh basil
  • 200g tofu, sliced into 2 0.5-inch thick fillets
  • 1 tbsp cornflour
  • 1 tsp smoked paprika
  • 1 tsp garlic pepper
  • 1 tsp oregano
  • 1 tsp salt
  • 3 tbsp oil, to fry

Instructions

  1. Sauté shallots in melted butter until soft.
  2. Add minced garlic and cook until fragrant.
  3. Stir in tomato puree and seasonings; mix well and add vegetable stock.
  4. Bring mixture to a boil and add pasta; simmer for 7–8 minutes.
  5. Incorporate plant-based cream; adjust cooking time if needed for pasta doneness.
  6. Prepare tofu by draining, pressing dry, slicing into fillets, and coating in seasoned cornflour.
  7. Fry the tofu until crispy on both sides.
  8. Serve sliced tofu atop the creamy pasta and garnish with fresh basil.
