  • ½ cup chopped fresh herbs (parsley, cilantro, basil, dill, tarragon, mint)
  • 2 roasted red peppers (finely diced)
  • ⅓ cup finely diced shallot
  • 2 garlic cloves (minced)
  • ½ cup extra-virgin olive oil
  • 1 lemon (zested and juiced)
  • ½ teaspoon kosher salt
  • ¼ teaspoon red pepper flakes
  • Ground black pepper (to taste)

Instructions

  1. In a large mixing bowl, combine white beans, fresh herbs, roasted red peppers, shallot, garlic, olive oil, lemon juice and zest, salt, red pepper flakes, and black pepper.
  2. Mix thoroughly until well combined.
  3. Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours or preferably overnight to allow flavors to meld.
  4. Stir again before serving or transfer to an airtight container for storage.
