  • 12 tablespoons unsalted butter (plus more for topping)
  • 1 ½ cups heavy cream
  • 12 ounces manchego cheese (freshly grated)
  • 1 to 2 teaspoons kosher salt
  • Freshly ground black pepper
  • Fresh chopped chives (for serving)

Instructions

  1. Prep the potatoes by washing, peeling, and chopping them. Submerge in ice water and refrigerate for 12 to 18 hours if making ahead.
  2. Boil the potatoes in cold salted water until fork-tender, about 12 to 15 minutes.
  3. Heat butter and cream together in a saucepan until warmed through.
  4. Drain the potatoes, return them to the pot, and mash using a potato masher or ricer.
  5. Mix in half of the warm butter and cream mixture along with salt until blended.
  6. Stir in remaining warm mixture with manchego cheese, allowing it to melt before blending smooth with a hand mixer.
  7. Adjust seasoning as necessary, top with fresh chives, and serve hot.
