  • 2 packs Ready-rolled shortcrust pastry (each pack weighs 320g)
  • 4 medium Lemons (juice and zest)
  • 200 g Caster sugar
  • 4 medium Eggs (room temperature)
  • 50 g Unsalted butter (room temperature)
  • 2 tbsp Icing sugar (for dusting)

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Roll out the shortcrust pastry and cut circles to fit into your tartlet tin.
  3. Prick the pastry bases with a fork, line with parchment paper, and fill with baking beans. Bake for 10 minutes until lightly golden.
  4. In a bowl, whisk together eggs and caster sugar until combined. Add lemon juice, zest, and room temperature butter; mix until smooth.
  5. Fill each pastry case with the lemon curd mixture and bake for another 15 minutes or until set but slightly wobbly in the center.
  6. Allow cooling completely before dusting with icing sugar before serving.
