  • ¼ teaspoon dried thyme
  • ¼ teaspoon salt
  • 2 bay leaves
  • 1 ½ pounds boneless, skinless chicken breasts
  • 6 cups low sodium chicken broth
  • 1 cup dry orzo pasta
  • ½ cup fresh squeezed lemon juice

Instructions

  1. Heat olive oil in a pot over medium heat. Sauté chopped carrots, onion, celery, and garlic for about 5 minutes until softened.
  2. Stir in black pepper, dried parsley, thyme, salt, and bay leaves. Add chicken breasts and pour in the chicken broth.
  3. Cook on the stovetop for 30 minutes until chicken is cooked through. Alternatively, use an Instant Pot for 15 minutes under high pressure.
  4. Remove chicken, shred it, and return to the pot. Stir in orzo pasta and lemon juice; simmer for another 10 minutes.
  5. Adjust seasoning as needed before serving.
