  • 1/3 cup freshly squeezed lemon juice
  • 1 tablespoon granulated sugar
  • 1 cup icing sugar
  • 1/4 cup freshly squeezed lemon juice
  • 1 teaspoon vanilla extract
  • Milk (as needed to adjust consistency)

Instructions

  1. Preheat your oven to 350°F. Grease an 8.5×4.5-inch loaf pan.
  2. In a large bowl, sift together flour, baking powder, and salt; set aside.
  3. In another bowl, whisk Greek yogurt, sugar, eggs, lemon zest, vanilla extract, and oil until smooth.
