- 1/2 cup granulated sugar
- 1 cup rolled oats
- 1/4 cup all-purpose flour
- 4 large eggs
- 1/2 cup honey
- 1 tablespoon lemon zest
- 1/2 cup freshly squeezed lemon juice
- 1/4 cup all-purpose flour
- Preheat your oven to 350°F (175°C) and grease your baking dish.
- In a mixing bowl, cream together butter and sugar. Add oats and flour; mix well.
- Press the mixture into the bottom of the baking dish and bake for 10-12 minutes until golden.
- While crust is baking, whisk together eggs, honey, lemon zest, and lemon juice in another bowl. Stir in flour until smooth.
