  • 2/3 cup lemon juice (freshly squeezed)
  • 4 large eggs
  • 2 cups sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and powdered sugar until smooth. Gradually mix in the flour and salt until crumbly.
  3. Press the mixture evenly into the bottom of a greased 9×13 inch baking pan.
  4. Bake the crust for about 15 minutes until lightly golden, then allow it to cool slightly.
  5. In another bowl, whisk together the eggs, sugar, lemon juice, and lemon zest until well combined.
  6. Pour the lemon filling over the baked crust and return to the oven for another 25-30 minutes until set but slightly jiggly in the center.
  7. Let the bars cool completely before slicing into squares. Dust with additional powdered sugar before serving.
