  • 1 jar (8 oz) oil-packed sun-dried tomatoes
  • 1 pound spicy Italian chicken sausage
  • 1 yellow onion, chopped
  • 2 shallots, chopped
  • 6 cloves garlic, minced
  • 1 cup chopped carrots
  • 1/2 cup chopped celery
  • 2 tablespoons Italian seasoning
  • 6 cups broth (chicken or vegetable)
  • 2 cans white beans, drained and rinsed
  • Salt and black pepper to taste
  • 2 cups baby spinach
  • 1 cup whole milk or cream
  • Zest and juice of 1 lemon
  • Chopped fresh parsley for serving

Instructions

  1. Heat 3 tablespoons of oil from the sun-dried tomatoes in a Dutch oven over medium-high heat.
  2. Add the chicken sausage and onion; cook until browned. Stir in shallots, garlic, carrots, celery, Italian seasoning, salt, and pepper; cook for another 5 minutes.
  3. Pour in the broth and simmer for about 10 minutes until vegetables are tender.
  4. Stir in spinach, sun-dried tomatoes, white beans, milk or cream, lemon zest, and juice; cook for a few more minutes until warmed through.
  5. Serve hot with fresh parsley on top.
