  • 750 grams lamb (bone-in pieces)
  • 1 cup yogurt
  • 1/2 cup heavy cream
  • 2 tablespoons ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 2 teaspoons coriander powder
  • 1 teaspoon cumin powder
  • 1/4 teaspoon garam masala
  • 34 green cardamom pods
  • 1 cinnamon stick
  • 45 cloves
  • 2 medium onions (thinly sliced)
  • 2 medium tomatoes (chopped)
  • 1/4 cup cooking oil or ghee
  • Salt (to taste)
  • Fresh coriander leaves (for garnish)
  • Saffron strands, slivered almonds, or fried onions (for garnish)

Instructions

  1. In a bowl, mix whisked yogurt, ginger-garlic paste, turmeric powder, red chili powder, coriander powder, cumin powder, and salt to create the marinade. Coat the lamb pieces well and let marinate for at least 30 minutes.
  2. Heat oil or ghee in a large pot over medium heat and sauté sliced onions until golden brown.
  3. Add cardamom pods, cinnamon stick, and cloves to the onions and stir for about 1 minute until fragrant.
  4. Stir in chopped tomatoes until softened then add the marinated lamb along with all the marinade. Mix well.
  5. Cover and simmer on low heat for about 75 minutes or until the lamb is fork-tender.
  6. Incorporate heavy cream and garam masala into the pot. Simmer uncovered for an additional 5 minutes; adjust seasoning as needed.
  7. Garnish with fresh coriander leaves before serving hot.
