  • 3 tbsp olive oil
  • 1 tsp salt
  • 1 egg yolk
  • 100 ml warm water
  • 100 g sour cream
  • 100 g crème fraîche
  • 250 g Hokkaido pumpkin
  • 1 red onion
  • 100 g feta cheese
  • 10 walnuts
  • 1 tbsp thyme

Instructions

  1. Prepare the Dough: In a bowl, combine flour, olive oil, salt, egg yolk, and warm water; knead until smooth. Cover with a damp cloth and let rest for 30 minutes.
  2. Preheat Oven: Heat your oven to 220°C (428°F).
  3. Prepare Toppings: Mix sour cream and crème fraîche in a bowl; season with salt, pepper, and nutmeg. Slice pumpkin thinly and cut onion into rings. Crumble feta and chop walnuts.
  4. Assemble: Divide the dough into four parts; roll each out thinly. Spread the sour cream mixture on top, then layer with pumpkin slices, onions, feta, and walnuts.
  5. Bake: Place on a baking sheet lined with parchment paper and bake for 12–15 minutes until golden brown.
