  • 10 ounces (284 grams) fresh strawberries (divided)
  • 34 tablespoons (4450 grams) granulated sugar
  • zest from 1/2 lemon (optional)
  • 1/2 tablespoon (7 milliliters) freshly squeezed lemon juice (optional)
  • 1/2 teaspoon vanilla extract (optional)
  • 2 cups (473 milliliters) cold milk

Instructions

  1. Hull and chop 6 ounces (170 grams) of the strawberries and place them in a bowl.
  2. Mash using a potato masher, fork, or your hands until crushed.
  3. Mix in the sugar and optionally add the lemon zest and lemon juice if using.
  4. Transfer the mixture to a small pot.
  5. Bring to a simmer over medium-low heat.
  6. Simmer while stirring for 2-5 minutes until it thickens into a syrup.
  7. Remove from heat and stir in vanilla extract if desired.
  8. Allow the syrup to cool to room temperature.
  9. Transfer to an airtight container and refrigerate until chilled, about 1 hour.
  10. Hull and finely dice the remaining 4 ounces (113 grams) of strawberries.
  11. Divide the cooled strawberry syrup between two glasses.
  12. Top with diced strawberries and pour in cold milk.
  13. Stir to combine all ingredients and serve immediately.
