  • 1 1/2 cups panko bread crumbs

  • 8 cloves garlic, crushed
  • 2 tbsp gochujang
  • 5 green onions, minced
  • 2 large eggs, lightly beaten
  • 2 tsp kosher salt
  • 2 tsp vegetable oil
  • 3 tbsp apricot jam
  • 2 tbsp gochujang (for glaze)
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 2 tsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp granulated garlic powder (or 2 cloves garlic, minced)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat vegetable oil in a skillet over medium heat; cook diced onions until translucent (about 10 minutes).
  3. Stir in crushed garlic and cook for an additional 2 minutes. Remove from heat and cool.
  4. In a bowl, combine cooled onion mixture with minced green onions, gochujang, eggs, and kosher salt.
  5. In a large mixing bowl, mix ground beef and breadcrumbs; add the onion mixture and gently combine.
  6. Shape the meat mixture into a loaf in a loaf pan or freeform on a baking sheet.
  7. Bake in preheated oven until internal temperature reaches 140°F (60°C), about 40 minutes.
  8. While baking, prepare the glaze by mixing apricot jam, gochujang, rice vinegar, honey, soy sauce, sesame oil, and garlic powder.
  9. Once the meatloaf reaches 140°F (60°C), apply glaze evenly over top.
  10. Return to oven and bake until internal temperature reaches 160°F (71°C), usually an additional 10-15 minutes.
