  • 1 ½ teaspoons chili powder
  • 1 tablespoon cumin
  • 6 tablespoons butter
  • ¾ cup chicken broth
  • 2 cups heavy cream
  • 4 ounces cream cheese
  • 1 ½ cup Monterey Jack cheese (shredded)
  • 2 cans diced green chilies

Instructions

  1. In a large bowl, mix shredded chicken with chili powder, cumin, salt, and pepper until well coated.
  2. Melt butter in a stock pot over medium heat. Add minced garlic and white parts of green onions; sauté for about 3 minutes.
  3. Stir in chicken broth, heavy cream, cream cheese, and sriracha; bring to a simmer while stirring until the cream cheese melts.
  4. Add the seasoned chicken mixture along with Monterey Jack cheese and diced chilies; stir well.
  5. Reduce heat to low and simmer for about 20 minutes while stirring occasionally. Adjust seasoning if needed and serve warm garnished with green onion tops.
