Instructions

  1. Prepare your surface by generously buttering a marble slab or large baking sheet.
  2. In a heavy-bottomed saucepan, combine sugar, cream, corn syrup, and salt. Cook over medium heat, stirring until the sugar dissolves. Attach a candy thermometer and let it cook without stirring until it reaches 260°F (127°C).
  3. Carefully pour the hot candy onto the prepared surface and allow it to cool for about 10–15 minutes until safe to handle.
  4. Grease your hands well with butter and start pulling the candy by stretching and folding it repeatedly for 10–15 minutes until it lightens in color.
  5. Shape the pulled candy into ½-inch thick ropes and cut into bite-sized pieces using buttered scissors. Place them on wax paper to firm at room temperature.
