  • 2 tsp fresh rosemary (or dried)

  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. In a mixing bowl, whisk together minced garlic, parsley, rosemary, oregano, lemon zest, lemon juice, olive oil, salt, and black pepper.
  2. Place the beef chops in a resealable bag or shallow dish and pour the marinade over them. Ensure they are well coated. Seal or cover and refrigerate for at least 15 minutes.
  3. Heat a cast iron skillet over medium-high heat. Add olive oil if necessary.
  4. Remove beef chops from the marinade and place them in the skillet. Cook for about 5 minutes on each side until reaching an internal temperature of at least 145°F (63°C).
