  • 1 cup yellow cornmeal

  • 1 cup buttermilk
  • 1/4 cup unsalted butter, melted

  • 1 cup fresh or canned corn kernels
  • 23 jalapeño peppers, seeded and finely chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup honey
  • Zest and juice of 1 lime

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9-inch baking dish.
  2. In a large mixing bowl, combine flour, cornmeal, sugar, baking powder, and salt.
  3. In another bowl, whisk together buttermilk, melted butter, and eggs until smooth.
  4. Pour wet ingredients into dry ingredients and stir until just combined.
  5. Gently fold in corn kernels, jalapeños, and cheddar cheese.
  6. Transfer the batter to the prepared dish and bake for 25–30 minutes until golden brown.
  7. While baking, mix honey with lime zest and juice for the glaze.
  8. Drizzle the warm glaze over the cornbread after removing from the oven.
