Jack o’ Lantern Quesadillas are a delightful way to celebrate the autumn season with a festive twist.   • 4-inch pumpkin cookie cutter (or cut by hand)

Instructions

  1. Cut pumpkin shapes from each tortilla using the cookie cutter or knife.
  2. Carve fun jack-o’-lantern faces into half of the cutouts.
  3. In a hot skillet, place an uncut tortilla and sprinkle cheese on top, then add a carved tortilla with the face down.
  4. Cook for about 2-3 minutes until cheese melts, then flip to reveal the face.
  5. Repeat with remaining tortillas and serve warm with salsa or your favorite dipping sauce.
