  • 1 pound Italian sausage (beef, turkey, or chicken)
  • 1 large onion (chopped)
  • 2 large carrots (chopped)
  • 3 stalks celery (chopped)
  • 1 large red bell pepper (chopped)
  • 1 large green bell pepper (chopped)
  • 2 medium zucchini (quartered lengthwise and thinly sliced)
  • 6 cloves garlic (minced)
  • 4 tablespoons olive oil
  • 1/2 cup apple vinegar
  • 6 cups chicken broth
  • 2 cans (15-ounce) tomato sauce
  • 1 can (15-ounce) diced fire-roasted tomatoes (undrained)
  • 2 tablespoons dried Italian seasoning
  • 12 teaspoons crushed red pepper flakes
  • 1 1/2 cups dried small pasta (such as shells, ditalini, mini penne, elbow or orzo)
  • 1/4 cup chopped fresh parsley
  • Freshly grated Parmesan cheese

Instructions

  1. Brown the sausage in a Dutch oven over medium heat until fully cooked; drain excess fat.
  2. In the same pot, heat olive oil and sauté chopped onion until softened.
  3. Add carrots and celery; cook for another few minutes before adding bell peppers and zucchini.
  4. Stir in minced garlic and apple vinegar; bring to a boil.
  5. Pour in chicken broth, tomato sauce, diced tomatoes, Italian seasoning, and crushed red pepper; mix well.
  6. Add the browned sausage back into the pot; bring to a boil then simmer uncovered for about 10 minutes.
  7. Stir in pasta and cook until tender—about another 10 minutes.
  8. Finish with chopped parsley and season to taste before serving hot topped with freshly grated Parmesan.
