  • 1 cup carrots
  • 5 cups chicken broth
  • 1.5 lbs red or yellow potatoes
  • 2 cups spinach
  • 1/2 cup heavy cream

  3. Pour in chicken broth while scraping the bottom of the pot to dissolve the tomato paste fully; bring to a boil.
  4. Add cubed potatoes and diced carrots; reduce heat to medium-low and let simmer uncovered for 15–25 minutes until potatoes are fork-tender.
