  • 1 brown onion
  • 2 carrots
  • 2 celery sticks

  • 6 cups vegetable broth (or chicken broth)
  • Salt and black pepper to taste

Instructions

  1. Chop the onion, carrots, celery, and garlic into manageable sizes.
  2. In a large pot, combine vegetable broth and chopped vegetables. Add salt, pepper, and optional bay leaf. Simmer over medium-high heat for about 20 minutes.
  3. Check vegetable tenderness; then remove bay leaf and strain solids with a slotted spoon.
  4. Blend the cooked veggies with about ½ cup of water until smooth.
  5. Return blended mixture to the pot with remaining broth. Stir to combine and adjust seasoning as needed.
  6. Bring the soup to a gentle boil, add pastina pasta, and cook for about 5–6 minutes or until al dente.
