  1. In a mixing bowl, whisk together the egg whites and sugar until slightly foamy.
  2. Stir in almond flour, orange zest, and fresh orange juice until a smooth dough forms.
  3. Form small balls using your hands or an ice cream scoop.
  4. Place cookie balls onto a parchment-lined baking sheet and create indents with your thumb.
  5. Fill each indent with orange marmalade.
  6. Chill in the refrigerator for at least 15 minutes before preheating the oven to 175°C (356°F).
  7. Bake for about 12 minutes until slightly golden but soft inside.
