  • 8 oz jar oil-packed sun-dried tomatoes (chopped, reserve 2 Tbsp oil)
  • 1 large onion (diced)
  • 3 large carrots (diced)
  • 2 stalks celery (diced)
  • 5 cloves garlic (minced)
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • 2 Tbsp tomato paste
  • 5 cups chicken broth
  • 1 lb shelf-stable gnocchi
  • 2 cups cooked chicken (shredded or chopped)
  • 3 oz baby spinach
  • 1 can evaporated milk (12 oz)

Instructions

  1. In a large pot over medium heat, heat reserved sun-dried tomato oil. Sauté onions, carrots, and celery for about 5 minutes until softened.
  2. Stir in sun-dried tomatoes, garlic, Italian seasoning, smoked paprika, salt, and pepper; cook for another minute.
  3. Mix in tomato paste and flour; cook for an additional minute.
  4. Pour in chicken broth, scraping any browned bits from the pot; stir well.
  5. Bring to a simmer and cover partially; reduce heat and let simmer for 15 minutes.
  6. Add cooked chicken, spinach, evaporated milk, and gnocchi; cook for another 5–10 minutes until heated through.
