  • 8 oz jar oil-packed sun-dried tomatoes (chopped)
  • 1 large onion (diced)
  • 3 large carrots (diced)
  • 2 stalks celery (diced)
  • 5 cloves garlic (minced)
  • 5 cups chicken broth
  • 1 lb shelf-stable gnocchi
  • 12 oz can evaporated milk
  • 2 cups cooked chicken (shredded or chopped)
  • 34 oz baby spinach

Instructions

  1. In a large pot or Dutch oven, heat the reserved sun-dried tomato oil over medium heat. Add diced onion, carrots, and celery and sauté until softened (about 5 minutes).
  2. Stir in sun-dried tomatoes, minced garlic, Italian seasoning, smoked paprika, onion powder, salt, and pepper. Sauté for another minute.
  3. Mix in tomato paste, chicken base, and flour until well combined; cook for 1 minute.
  4. Pour in chicken broth while scraping the bottom of the pot to lift browned bits; stir until combined.
  5. Bring to a simmer; partially cover and reduce heat to low. Simmer for 15 minutes.
  6. Add cooked chicken, spinach, evaporated milk, and gnocchi; cook on medium-low for about 5-10 minutes until heated through.
  7. Serve immediately topped with grated parmesan cheese if desired.
