  • 15 ounces small white beans (drained and rinsed)
  • 15 ounces kidney beans (drained and rinsed)
  • 1/2 cup frozen cut green beans
  • 1/2 cup small shell pasta
  • 2 cups baby spinach leaves
  • 2 tablespoons chopped parsley

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions and sauté until translucent.
  2. Stir in celery and carrots; cook for about 5 minutes until softening.
  3. Add zucchini and minced garlic; cook for an additional minute until fragrant.
  4. Pour in diced tomatoes with juices; stir well.
  5. Add vegetable broth, bring to a boil, then reduce heat. Stir in white beans, kidney beans, frozen green beans, shell pasta, spinach, salt, and pepper.
