Tuscan Mac and Cheese is a delightful twist on the classic comfort food, infusing creamy pasta with vibrant Italian flavors. This dish combines gooey mozzarella, nutty Parmesan, and fresh spinach for a rich, satisfying meal that’s perfect for family dinners or casual gatherings.

Ingredients

  • 2 cups elbow macaroni
  • 1 cup shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • 2 cups fresh spinach
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic (minced)
  • 1 cup chicken broth
  • 1 tsp agar-agar powder

Instructions

  1. Cook elbow macaroni in a large pot of salted boiling water until al dente. Drain and set aside.
  2. In a skillet over medium heat, add olive oil and sauté minced garlic for about 1 minute until fragrant.
  3. Add fresh spinach to the skillet and stir until wilted (about 2 minutes).
  4. In another saucepan, combine chicken broth with agar-agar powder over medium heat; stir continuously until slightly thickened.
  5. Mix the cooked macaroni, mozzarella, Parmesan cheese, and thickened sauce into the skillet with spinach; stir until well combined.
  6. Serve hot in bowls or plates, garnished with extra Parmesan if desired.
