  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups sweet corn (fresh or frozen)
  • 1 cup creamy ranch dressing
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • 4 green onions, chopped
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt, pepper, cumin, and chili powder. Cook in a skillet over medium heat for 6-7 minutes per side until no longer pink. Shred the cooked chicken into bite-sized pieces.
  3. In a large bowl, mix shredded chicken, corn, ranch dressing, half of the cheese, and chopped green onions until well combined.
  4. Transfer the mixture to the prepared baking dish and top with remaining cheese.
  5. Bake for 25-30 minutes until bubbly and golden on top.
