Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper; cook for 5-7 minutes per side until golden brown and cooked through.
  2. Remove chicken from the skillet and let it rest. Sauté minced garlic in the same skillet for about one minute until fragrant.
  3. Shred the cooked chicken into bite-sized pieces and return to the skillet with salsa; stir to combine.
  4. Warm tortillas slightly to make them pliable. Spoon chicken mixture into each tortilla, roll tightly, and place seam-side down in the skillet.
  5. Sprinkle cheese generously over the top, cover with a lid, and cook on low heat for about five minutes until cheese melts.
  6. Garnish with fresh cilantro before serving hot with additional salsa or sour cream if desired.
