  • 8 oz lo mein noodles
  • 1 lb large shrimp, peeled and deveined
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 medium carrot, julienned
  • 3 green onions, chopped (reserve some greens for garnish)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp toasted sesame oil
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated

Instructions

  1. Prepare your ingredients by washing and slicing the vegetables. Set them aside.
  2. Cook lo mein noodles according to package instructions until al dente. Drain and rinse under cold water.
  3. In a large skillet or wok, heat oil over medium-high heat. Add garlic and ginger; sauté until fragrant. Add shrimp and cook until pink (about 3 minutes). Remove shrimp from the pan and set aside.
  4. Stir-fry bell peppers and carrots in the same skillet for about 2 minutes until they soften but remain crunchy.
  5. Return the noodles and shrimp to the skillet along with the green onions. Pour in soy sauce and sesame oil; toss everything together until well combined.
  6. Serve hot, garnished with reserved green onion tops.
