  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1/2 cup low-sodium vegetable broth
  • 1/4 cup unsalted butter
  • 3 cloves garlic (minced)
  • 2 tbsp fresh parsley (chopped)

Instructions

  1. Prepare your ingredients by peeling and deveining the shrimp if necessary.
  2. In one bowl, whisk the eggs; in another bowl, season flour with salt and pepper.
  3. Heat butter in a large skillet over medium heat until bubbly.
  4. Dredge each shrimp in flour, coat with eggs, and place them in the skillet. Cook until golden brown, about 2 minutes per side.
  5. Remove shrimp; add minced garlic to the pan and sauté until fragrant. Stir in vegetable broth and lemon juice.
  6. Return shrimp to the skillet, coating them with the sauce and finishing with chopped parsley.
