  1. Crush the Oreo cookies into fine crumbs using a food processor or a zip-lock bag with a rolling pin.
  2. In a bowl, mix the crushed Oreos with softened cream cheese until well combined.
  3. Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
  4. Chill the balls in the fridge for about 30 minutes until firm.
  5. Melt the chocolate chips in a microwave-safe bowl or double boiler until smooth.
  6. Dip each truffle into the melted chocolate, letting any excess drip off. If desired, sprinkle with toppings.
