  • 4 salmon fillets (6 oz each)
  • 1 cup fresh pineapple, diced
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 3 garlic cloves, minced
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tbsp olive oil

Instructions

  1. In a medium bowl, whisk together honey, soy sauce, minced garlic, and lime juice to create the marinade.
  2. Place salmon fillets in a shallow dish or resealable bag and pour half of the marinade over them. Marinate for at least 30 minutes.
  3. Preheat grill to medium-high heat (375°F) or oven to 400°F (200°C). Lightly oil the grill grates or line a baking sheet with parchment paper.
  4. Cut fresh pineapple into rings or chunks.
  5. Remove excess marinade from the salmon and place it on the grill or baking sheet with pineapple pieces. Grill for 5-7 minutes per side or bake for 15-20 minutes until cooked through.
  6. Brush remaining marinade over salmon and pineapple during the last few minutes of cooking for extra flavor. Serve hot.
