  • 2 cups fresh broccoli florets
  • 1 cup carrots, thinly sliced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 3 tbsp low-sodium soy sauce
  • ½ cup low-sodium chicken broth
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil

Instructions

  2. Marinate chicken in soy sauce, ginger, and garlic for about 15 minutes.
  3. Heat vegetable oil in a wok or large skillet over medium-high heat; add marinated chicken in a single layer and cook until golden brown (about 5 minutes).
  4. Add broccoli florets and carrot slices; sauté for another 3–4 minutes until vegetables are bright green but still crispy.
  5. In a small bowl, mix cornstarch with chicken broth until smooth. Pour into the pan along with any remaining soy sauce; stir well as it thickens.
