  • 1 lb lean ground beef
  • 6 corn tortillas
  • 2 cups enchilada sauce (store-bought or homemade)
  • 2 cups shredded cheddar cheese
  • 1 can (15 oz) black beans, rinsed
  • 1 medium onion, chopped
  • ¼ cup fresh cilantro, chopped

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a large baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, brown the ground beef with the chopped onion for 6-8 minutes; drain excess fat.
  3. Stir in black beans and half of the enchilada sauce; simmer for 5 minutes.
  4. Layer half of the remaining enchilada sauce in the baking dish, followed by three tortillas, half of the beef mixture, and half of the cheese. Repeat layers, finishing with cheese on top.
  5. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
  6. Let cool for five minutes before garnishing with cilantro and serving hot.
