Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup unsalted butter (softened)
  • 2 large eggs (room temperature)
  • 1 cup cherry jam or preserves
  • 2 tsp vanilla extract
  • 1 tsp baking powder
  • ½ cup whole milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan and line the bottom with parchment paper.
  2. In a bowl, cream together softened unsalted butter and granulated sugar until fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  3. In another bowl, whisk together flour, baking powder, and a pinch of salt. Gradually combine with wet ingredients while alternating with milk until smooth.
  4. Pour half the batter into the prepared pan. Spread cherry jam evenly over it and top with the remaining batter.
  5. Bake for about 35-40 minutes or until golden brown and a toothpick comes out clean.
  6. Cool in the pan for ten minutes before transferring to a wire rack. Slice and serve as desired.
