  • 4 boneless skinless salmon fillets (about 200g each)
  • 1/3 cup honey
  • 6 tbsp unsalted butter
  • 2 tbsp rice vinegar (or apple cider vinegar)
  • 1.5 tbsp soy sauce
  • 12 cloves garlic (finely diced)
  • Chili flakes (to taste)
  • Olive oil (for cooking)
  • Salt & pepper (to taste)
  • Finely diced spring onion (for garnish, optional)

Instructions

  1. Prepare the salmon by patting dry and seasoning with salt and pepper.
  2. Heat olive oil in a non-stick pan over medium-high heat. Cook salmon skin-side down for about 3 minutes until golden brown, then flip and cook for an additional minute.
  3. Move the salmon to the top of the pan. Add butter and baste the fish for 1-2 minutes until golden on the other side.
  4. Lower heat, add garlic and chili flakes, frying until fragrant (10-20 seconds). Stir in honey, vinegar, and soy sauce; simmer until thickened (about 5 minutes).
  5. Return the salmon to the pan, basting with sauce before serving topped with spring onion if desired.
