  • 1 pound chicken fillet (breast or skinless boneless thighs)
  • 1 head romaine lettuce, sliced 1-2 inches wide
  • 4 strips turkey bacon, crispy fried and sliced to bits
  • 1 avocado
  • 1/2 cup cherry tomatoes, sliced
  • 1/4 cup corn kernels
  • 1/4 red onion, thinly sliced
  • 1/3 cup honey
  • 2 tablespoons dijon mustard
  • 1/2 teaspoon ground mustard
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 2 cloves garlic, minced
  • salt to taste

Instructions

  1. Prepare the dressing by mixing honey, dijon mustard, ground mustard, olive oil, apple cider vinegar, minced garlic, and salt in a jar or bowl; shake well.
  2. Marinate the chicken in one-third of the dressing for at least 30 minutes.
  3. In a frying pan, cook turkey bacon until crispy and set aside. In the same pan, cook marinated chicken until browned and cooked through.
  4. Assemble the salad by layering romaine lettuce, tomatoes, avocado, corn kernels, red onion, crispy turkey bacon bits, and sliced chicken in a large bowl. Drizzle with remaining dressing.
