  • 1/2 cup coconut aminos
  • 1/4 cup pineapple juice
  • 1/4 cup tomato paste
  • 46 pitted dates
  • 2 lbs boneless chicken thighs

Instructions

  1. Soak dates in warm water for 10-15 minutes to soften.
  2. In a blender, combine soaked dates, coconut aminos, pineapple juice, tomato paste, garlic powder, chili powder, and smoked paprika; blend until smooth.
  3. Place chicken in a shallow dish and pour marinade over; toss to coat. Cover and refrigerate for at least 30 minutes or up to 24 hours.
  4. Cut fresh pineapple into rounds and remove the inner core.
  5. Preheat grill to high heat (500°F). Grill marinated chicken and pineapple for about 5-6 minutes per side until cooked through and caramelized.
