Ingredients

Scale
  • 1 cup milk (warmed)
  • 1 packet instant yeast (2 teaspoons)
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 2 tablespoons unsalted butter (room temperature)
  • 3 cups all-purpose flour
  • 1/2 cup unsalted butter (chilled and sliced)
  • 1 whole egg (for egg wash)
  • 2 tablespoons milk (for egg wash)

Instructions

  1. Activate the yeast by mixing warm milk, instant yeast, and sugar in a bowl; let it froth for about 5-10 minutes.
  2. In a large mixing bowl, whisk together flour and salt. Create a well to add the yeast mixture and room temperature butter. Combine until a rough dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Place in a greased bowl, cover with plastic wrap, and let rise for about 1 hour until doubled.
  4. Prepare the chilled butter layer by pounding it between parchment paper into a rectangle; refrigerate.
  5. Roll out the risen dough into a rectangle and fold over the butter layer. Seal edges and roll out again.
  6. Fold the dough into thirds and refrigerate for 30 minutes; repeat rolling and folding two more times.
  7. Shape the croissants by cutting triangles from rolled-out dough and rolling them up tightly.
  8. Proof for about 1 hour until puffed up noticeably, then brush with egg wash.
  9. Bake at 400°F (200°C) for 15-20 minutes until golden brown.
