  • 6 tbsp salted butter
  • ½ cup light brown sugar, packed
  • ½ cup granulated sugar
  • ½ cup sweetened condensed milk
  • ½ cup light corn syrup
  • 2 cups pecan halves
  • 16 oz almond bark or high-quality chocolate

Instructions

  1. Preheat your oven to 350°F (175°C). Spread the pecans on a baking sheet and toast them for 5–10 minutes until fragrant. Allow to cool and chop roughly.
  2. Line another baking sheet with parchment paper or a silicone mat.
  3. In a large microwave-safe bowl, melt the butter. Add light brown sugar, granulated sugar, sweetened condensed milk, and corn syrup; mix well. Microwave on HIGH for 6–8 minutes, stirring occasionally until reaching the soft-ball stage (235°F).
  4. Stir in vanilla extract and chopped pecans into the caramel mixture.
  5. Drop spoonfuls of the mixture onto the prepared baking sheet and refrigerate for about 20 minutes to set.
  6. Melt almond bark or chocolate until smooth.
  7. Using a fork, dip each caramel-pecan mound into the melted chocolate, letting excess drip off before placing them back on parchment paper.
  8. Allow to set completely before storing.
