Ingredients

Scale
  • 4 cups All-Purpose Flour
  • 1/4 cup Granulated Sugar
  • 2 teaspoons Salt
  • 2 teaspoons Instant Yeast
  • 1 1/2 cups Cold Whole Milk (or Almond Milk)
  • 1 cup Unsalted Butter (softened but cold)
  • 12 pieces Semi-Sweet Chocolate Batons

Instructions

  1. In a stand mixer bowl, combine flour, sugar, salt, and yeast. Mix briefly.
  2. Gradually add cold milk while mixing on low speed until smooth yet slightly sticky.
  3. Incorporate small cubes of cold butter into the dough until visible chunks remain.
  4. Knead the dough on medium speed for about 5 minutes until elastic.
  5. Wrap the dough in plastic wrap and refrigerate for at least 2 hours or overnight.
  6. Roll the chilled dough into a rectangle about 1/4 inch thick and cut into triangles.
  7. Place a chocolate baton at the base of each triangle and roll up toward the tip.
  8. Arrange on a baking sheet lined with parchment paper; cover lightly and let rise until doubled (about 1 hour).
  9. Preheat oven to 400°F (200°C) while croissants are rising.
  10. Brush each croissant with an egg wash made from whisked egg and milk before baking for about 20 minutes or until golden brown.
